Immediately remove the eggs from the boiling water (keep the boiling water)and place in a bath of very cold water under a running faucet for 2 min. Gently lower the eggs back into the boiling water for 10 seconds. return the eggs to the cold water bath, gently cracking them, for at least 2 min. Keeping the eggs in the cold water bath longer is fine but will cool the inside of the egg. The first chilling makes the whites shrink from the shells, while plunging the eggs into boiling water a second time expands the shell and allows it to pull away from the egg. Place eggs in pot and add water to just cover the tops of eggs. Cover pot, bring to boil. Turn heat off just after the boil starts (this keeps eggs from cracking). Let sit in covered pot on burner for exactly 13 min. Have a large bowl of ice water waiting and place eggs immediately in ice water until cooled. If shells are still sticking, next time try for 14 min. Find what works for your stove. They must be perfectly cooked for shells to come clean. Renee Cole

Egg at room temperature. If just out of fridge...wash egg with tap water. Drop egg only if water is boiling. Wait 10 min. Take out egg and put it in tap or ice cold water. Guaranteed...shell does not stick to egg white!!! A. Dones
